Also known as Pepa de Zapallo, the Tiger’s Eye bean originates from South America. Popular in recipes because the stunning coloured thin skin virtually disappears on cooking, leaving a creamy smooth pulp suitable for chili, dips, spreads and soups. Produced on compact plants that will occasionally send out short runners, but overall are bush type. The pods can also be eaten fresh when young, or dried for winter use.
