The Jerusalem artichoke is a herbaceous perennial plant, cropped as an annual, belonging to the Asteraceae (Compositae) family. The fleshy, thin-skinned tubers are variable in size, shape, and highly branched, and the inside is white with a crispy and watery texture. Tuber colors very from white to yellow.
Jerusalem artichokes taste great in a variety of different dishes. Like other root vegetables, they can be roasted, sautéed, fried, or even sliced thinly and made into chips (crisps). They can also be used raw in salads, or puréed to make delicious soups, risottos and chowders.
Jerusalem artichokes are extremely easy to grow, hardy and high yielding. They require one square meter of space BUT best to grow them in a large pot as they multiply rapidly. Very aggressive if left untouched.
