The Purple Saphire Potato produces medium sized oval shaped potatoes with purple skin and purple flesh. They have good flavour and retain colour when cooked. It is especially good for potato salads but also for mashing, steaming, boiling, roasting and salads. Very productive.
Prefer sunny position, prepare bed deeply at least 25cm down, soil should be friable to avoid odd shaped potatoes. Sow in 10cm deep furrows with 25 cm between tubers and 75cm between rows. Fertilise well. Large tubers can be cut so long as each half has an eye or sprout.
Purple saphire potatoes originated in South America. High in anthocyanins (which are powerful antioxidants), these relatives of the wild potatoes of the Andes are popular in salads and as thinly sliced chips (crisps) where the marbling is shown to great effect.
It can be grown in the soil, in big deep pots and grow-bags. In the case of indeterminate potatoes, they produce their crop along their growing stem, just like tomatoes; the only difference is that tomatoes grow above the soil, fruiting along the exposed stem upward; while potatoes crop below the soil, so the stem must be continually covered up in order to produce viable tubers. These are often your most prolific, late harvest varieties needing around 90-120 days to reach maturity.
