Spaghetti squash is a summer fruiting vegetable and gets its name from it’s spaghetti like flesh once cooked.
Plant directly in the garden once the threat of frost is over or start mid winter in a glasshouse or warm windowsill.
Sow seeds 15mm deep and roughly 1m apart in a full sun position. The vines can be left to grow along the ground(place some straw mulch under the fruit to prevent rotting) or the vines can grow up a trellis. It’s important to have a sturdy trellis to support the weight of the fruit.
Harvest when the vine starts to die off, or when the fruit is a bright yellow colour. Like other members of the squash family, the spaghetti squash can last for a long time after being harvested. Store somewhere cool and dry like in the pantry.
There’s many different recipes online for cooking but I’ve found that slowly roasting the squash (at 180*c for roughly 1.5hrs), cut into halves and cut side down on a baking tray is the best. I add bacon and cheese. Beautiful flavours !
