Oaxacan corn is an heirloom variety from southern Mexico with a green to yellow-green colouration. Oaxacan corn is a dent corn which is pick after the stalk has completely dried or it can be hung and dried. The dried corn can then be ground into cornmeal flour to be used in making tortillas among other things.
Growing Information: Oaxacan corn is open-pollinated, meaning the seeds are produced through wind and gravity. Its best to grow them apart from other varieties of corn to prevent cross pollination if you want a pure strain.
